Ingredients
4 tomatoes - chopped
oil - as per use
1 tablespoon rye
3 dry red chillies - broken
5 curry leaves
2 onions - finely chopped
1 tablespoon ginger garlic paste
2 green chillies - chopped
1/2 tablespoon Kashmiri red chilli powder
1/2 tablespoon turmeric powder
salt - as per taste
2 tablespoons green coriander - finely chopped
Instructions

To make Kerala Tomato shallow fry, first toasty the cooking oil in a pot.

toss in mustard seeds and dehydrated red chilies.

When the mustard starts to crackle, toss in curry leaves, green chilies and onions.

After 1 minute toss in ginger garlic paste.

toasty shallot until it becomes soft and brown.

After that toss in Kashmiri red chilli ground mix and turmeric ground mix.

toss together well and toss in minced tomatoes.

Let it toasty for 5 to 7 mins.

After the tomatoes are soft, toss in seasoning and toss together.

toasty for 1 minute and then finish off with green coriander.

For dinner, present Kerala tomato shallow fry with beetroot sambar and rice.
