Ingredients

  • 4.5 cup Curd (Dahi / Yogurt) - with full fat
  • 1 1/2 - 2 tablespoons Sugar - adjustable
  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • 2 pinch Saffron strands
  • 1/2 teaspoon Milk - warm
  • 7-8 Pistachios - crushed

Instructions

To prepare Kesar Elaichi Shrikhand formula, begin with making hung curd.

Line a strainer with a kitchen cotton towel or a wipe down muslin cloth.

Place the strainer over a deep dish.

empty the curd into it and bring edges of muslin cloth and tie on the edge lightly to refrain curd from overflowing.Gently press and let the whey aqua drip.Keep it in fridge along with the deep dish beneath strainer, for 4-5 hours.

I kept it overnight, so the entire whey aqua dripped off the hung curd.After the specified time, take the hung curd out from the cloth and place it in a dish with lid and store in the fridge it.To make Kesar Elaichi Shrikand, take toasty dairy liquid in dish and mix in the saffron strands to it and agitate and keep aside.dusting masala condiment 4-5 cardamom in a mortar.Take the hung curd in a dish, and mix in sweetener and cardamom dusting masala condiment and gently agitate.Then mix in the saffron dissolved dairy liquid to it.Using a Hand blender, whip till it is seamless and sweetener is dissolved.Freeze Kesar Elaichi Shrikand till required and enjoy it chilled, garnished with pistachio as a dessert or to side with Puri and batata nu shaak formula for breakfast or lunch.
