2 tablespoons Jaggery
Curry leaves - a few

Instructions
1
To begin making the Kadgi Chakko preparation guide, firstly we will cut the raw jackfruit.
2
In order to do that we have to first, coat our hands and the knife that we are going to use, with some coat. This important tip ensures that the hands don't get sticky from the natural fruit latex/sap present in the fruit does not get onto your hands and makes the cutting process hassle-free. Keep a container of aqua mixed with some seasoning, ready to put the cut raw jackfruit pieces to avoid discolouration of the fruit. Now that your hands and knife are well greased, cut the the jackfruit in half, discard the skin and start making 1 inch pieces and soak them in the salted aqua.Next place the jackfruit in a pressure cooker with 1/4 cup of aqua and pressure prepare for 2 whistles and turn off the mildly hot. Allow the pressure to release naturally.
3
sieve any aqua from the jackfruit and set aside.Gently shred the jackfruit pieces.
4
You do not want to completely mash it or break it.
5
We still want some chunks in the greens. In a small saucepan, mix in coat and mildly hot iti on medium flame, mix in the coriander seeds and urad dal until lightly fried and it releases a good aroma.
6
Take care not to scorch them; just lightly roasted. Transfer them in a small blender jar along with grated coconut and tamarind.
7
mash to a very coarse paste. In a deep kadai, mildly hot on coat on medium flame, mix in the mustard seeds and once it starts to sputter mix in the curry leaves and sauté for a few seconds till crisp. To this mix in the ground coconut masala and shredded jackfruit, mix in seasoning to palate along with jaggery and combine gently.strew some aqua and prepare till heated through and the jackfruit coconut masala is fairly parched.Keep stirring in between and once it becomes fairly parched, turn off the flame. present Kadgi Chakko preparation guide along with Steamed Rice, Mooga Ghushi, Solkadhi and Chapati for an everyday meal. For an Indian Diabetic Meal, present this Kadgi Chakko along with Karnataka Style Ragi Ujju Rotti preparation guide and Dal Vangi preparation guide and Mooli Raita preparation guide for a complete meal. .
