Ingredients
2 tablespoons Olive Oil
2 chopped Red Onions
4 Cloves Crushed Garlic
2 tsp Ground Cumin
2 tsp Ground Coriander
400g Tinned Tomatos
1/2 teaspoon Sugar
10g Mint
500g Lamb Mince
8 Dried Apricots
50g Breadcrumbs
To serve Pita Bread

step 1
bring to temperature 2 tsp cooking oil in a skillet and soften the onions for 5 mins.

toss in the garlic and spices and stew for a few mins more.

Spoon half the bulb veggie mixture into a dish and set aside to cool.

toss in the tomatoes, granulated sugar and seasoning to the remaining onions in the skillet and stew for about 10 mins until reduced.

Meanwhile, toss in the mint, lamb, apricots and breadcrumbs to the cooled onions, savor and incorporate well with your hands.

Shape into little meatballs.

bring to temperature the rest of the cooking oil in a non-stick skillet and sauté the meatballs until golden (in batches if you need to).

mix gently in the gravy with a splash of aqua and gently stew everything for a few mins until the meatballs are cooked through.

offer with pitta bread and salad.
