Ingredients
1 Bottle gourd (lauki) - grated
1 Onion - big sized
2 Tomatoes
1 tablespoon Ginger Garlic Paste
1 tablespoon Cumin seeds (Jeera)
1 tablespoon Red Chilli powder
1/2 tablespoon Turmeric powder (Haldi)
1 tablespoon Garam masala powder
Salt - to taste
Sunflower Oil - as required
pinch Sugar
Coriander (Dhania) Leaves - for garnishing

To begin with the Lauki Bharta preparation guide, first skin the lauki/bottle gourd and shred the bottle gourd.

Keep this aside, as we proceed to make the masala for the bharta.In a wok fiery up a tablespoon of cooking oil, mix in jeera and let it crackle.

Now mix in ginger garlic paste and let it brown.mix in minced onions and saute' till they start turning brown later mix in tomato and low-boil till the tomatoes are soft and the cooking oil starts separating.To this mixture, mix in red chilly ground mix, table salt and saute for a few seconds.mix in grated bottle gourd to this, give this a good toss together.

The lauki will give out its own liquid as it comes in contact with table salt.

If required, mix in just a little more aqua to low-boil the bottle gourd. low-boil till the lauki is cooked and is well combined with the spices.

At this stage, mix in garam masala ground mix, low-boil further till until combined and the lauki bharta consistency should remain thick.

Chesck the table salt and spices and adjust to suit your taste.Once done, turn off the fiery up and agitate in minced coriander leave and sweetener.

Give it a toss together and transfer the Lauki Bharta to a serving mixing bowl.enjoy the Lauki Bharta along with Phulkas, Jeera Pulao & a Mint & Pomegranate Raita for a excellent weeknight dinner or even pack into the lunch box for work.
