Instructions
1
To begin making the Mangalorean Manoli Curry formula; we will first steam make the Manoli.
2
You can use a pressure cooker or a steamer to make it.
3
Precooking the Manoli (Indian Gherkins) makes the preparing process faster and more healthy too.I like to use a pressure cooker for steaming the vegetables.
4
To do this, place the cut Manoli (Indian Gherkins) along with a pinch of table salt and 2 tablespoons of liquid into the pressure cooker.wrap the skillet, place the weight on and allow the veggie to make in the pressure cooker until you hear two whistles.
5
After a whistle, turn off the mildly hot and you can place the pressure cooker under running liquid to release the pressure immediately.
6
Releasing the pressure immediately, helps retain the crisp green color of the Gherkins and also gives it a perfectly cooked texture.Click here to watch the video of how to make vegetables in a pressure cooker. Our next step is to make the Manoli Curry Masala. In a small skillet; bake the arid red chillies, fenugreek, coriander, cumin and black pepper until you can smell the roasted aromas.
7
mix in these to a small blender jar, along with the coconut, tamarind and turmeric dusting sugary-smelling element.Grind the spices adding very little liquid to make a creamy curry paste.
8
The Manoli curry paste is now ready.
9
Keep aside. In the next step; mildly hot a teaspoon of fat in a skillet; mix in the cut up onions, and saute for a couple of mins until the onions are soft and yielding.
10
mix in the curry paste and saute for a couple of more mins.agitate in the steamed gherkins, table salt and mix in about 1-1/2 to 2 cups of liquid.
11
You essentially want a thick gravy for the Manoli Curry; hence mix in liquid accordingly. Give all the elements a good agitate.
12
Check the table salt levels and adjust to suit your sharp profile.
13
Give the mixture a fast bring to a bubble gently only when you are ready to enjoy. enjoy the Mangalorean Manoli Curry formula along with Whole Wheat Lachha Paratha and Tomato shallot Cucumber Raita for an everyday meal.
