Ingredients
500 grams Ridge Gourd (Turai/ Peerkangai) - cut into 1 inch cubes

The ridge gourd will release aqua, seal and toast for 3-4 moments more on medium scalding up, till it is soft and cooked through.When done, uncover the kadhai, mix in the methi leaves, garam masala ground mix, lemon nectar, seasoning and toss together well once again.toast this together for 3-4 moments again on a high scalding up until all the aqua released by methi and ridge gourd dries up.At this stage, leave the sabzi uncovered, so that the vegetables can arid up completely leaving you with a arid sabzi.
