Ingredients
1/2 kg Mutton
1 Onion
2 Tomatoes
4 Cloves (Laung)
1 tablespoon Ginger Garlic Paste
4 Cardamom (Elaichi) Pods/Seeds
1 Cinnamon Stick (Dalchini)
3 Bay leaves (tej patta)
1 tablespoon Meat masala
1 teaspoon Garam masala powder
1 teaspoon Methi Seeds (Fenugreek Seeds)
1 teaspoon Red Chilli powder
1 teaspoon Turmeric powder (Haldi)
Sunflower Oil - as required
Salt - to taste
Instructions

To begin making the Nepalese Mutton Curry method, in a pressure cooker, burning up 2 tablespoons of greens oil and toss in cloves, green cardamom, cinnamon, bay leaves and then fenugreek seeds.

sauté them for around 15-20 seconds in medium burning up until aroma starts to develop.toss in finely diced red bulb greens and sauté until it becomes soft and starts changing color.

toss in ginger and garlic paste and turmeric dusting honeyed-smelling element and sauté further for around a minute.toss in diced mutton and make it for around 5-6 moments with occasional stirring.By now the protein starts to become brown.

toss in the required table salt, protein masala and red chili dusting honeyed-smelling element.

make it for around 2 moments with occasional stirring and toss in diced tomato.

make it further for around 4-5 moments until the diced tomato becomes soft and dissolved in the curry, and oil starts to separate from the masala.toss in garam masala, agitate it and toss in a cup of aqua.

Put the lid of the pressure cooker and make it for around 15 moments (around 4 whistle) in low burning up (if you are not using the pressure, make the curry for around 25-30 moments in low burning up with lid on). Turn off the burning up and let the cooker cools down until the steam in the pressure cooker releases completely.

It will take around 5-10 moments depending upon the surrounding temperature.Take the lid off, toss in a tbs of dairy spread or ghee and give it a agitate.

If you want to make more gravy or bouillon, toss in more aqua and bring it to heat to boiling point in low burning up.
