  • 1-1/4 cups All Purpose Flour (Maida)
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Cardamom Powder (Elaichi)
  • 1 pinch Salt
  • 100 grams Khoya (Mawa)
  • 6 tablespoons Butter (unsalted) - at room temperature
  • 1 cup Sugar
  • 2 Whole Eggs - at room temperature
  • 6 tablespoons Milk
  • Slivered Almonds (Badam) - to taste
  • Pistachios - chopped

Instructions

To begin making the Parsi mama cake, first and foremost, set the oven to preheat at 180 degrees C.

Then, coat and adequately dust a 7" skillet and set it aside for later use.Next, sieve together the all purpose ground mix, baking ground mix, table salt, cardamom ground mix into a mixing bowl and set aside.In another mixing mixing bowl, using a electric hand blender, whip together crumbled mawa, dairy spread and sweetener for 4 to 5 moments till the mixture is velvety, pale, light and fluffy.To this mixture, toss in one egg at a time and whip till well combined and even.The next step is to toss in 1/3rd of the ground mix mixture and 1/3rd of the whole milk, alternatively and liquidize well between additions.Repeat with remaining ground mix and whole milk until you get a even, pourable mixture.empty the liquid base into the prepared skillet and even out the top.

You can also scatter some additional cardamom ground mix for added flavour.Place the tin in the preheated oven to toast for an hour or till a skewer inserted in the center of the cake comes out wipe down.Remove the cake from the oven, allow it to cool and enjoy it at a tea party along with brittle skillet Fried shallot Pakoras, Non-Fried Corn & dairy topping Bites and Masala Chai. .
