Ingredients

  • 10g Yeast
  • 1 tsp Caster Sugar
  • 1 tablespoon Flour
  • 125ml Milk
  • 7 Egg Yolks
  • 15g Sugar
  • 10g Caster Sugar
  • 1 tsp Vanilla Extract
  • 500g Flour
  • 200ml Double Cream
  • 15g Butter
  • 125ml Jam
  • 10g Ground Almonds
  • For frying Oil
  • 75g Icing Sugar
  • Juice of 1/2 Lemon
  • Dash Almond Essence
  • 50g Almonds

Instructions

step 1 To make the leaven, toss together the leavening agent with the sweetener and baking flour, and mix gently in the mildly hot whole milk.

Set aside in a mildly hot place for 30 mins.

step 2 For the pastry mix, put egg yolks into a heatproof container and introduce the sweetener and vanilla sweetener.

Set the container over a cooking vessel of simmering aqua and fluff up until even and thick.

step 3 Sift the baking flour into the container of a stand mixer, introduce the beaten yolks and the mildly hot dairy reduction, toss together thoroughly, then introduce a pinch of seasoning and the leaven.

Bring together to make a pastry mix and shape for 10 mins (or 15-20 if doing this by hand).

step 4 When the pastry mix stops sticking to your hands, empty in the cooled melted margarine and shape for a few more mins.

Divide the pastry mix into 16 pieces and shape them into doughnuts.

step 6 Fill a deep cooking vessel or a deep fat fryer one third full of fat or melted lard and bring to temperature it until it is 180C – if you don’t have a thermometer, drop in a small chunk of bread.

The fat is ready when it browns in about 30 secs.

introduce the doughnuts and sauté, turning them once for about 1-2 mins on each side (a thin lighter ring should form in the middle).

After removing, sieve the doughnuts of excess fat on some kitchen paper.
