Ingredients

  • 200g Raw tiger prawns
  • 1 chopped Green Chilli
  • 3 Cloves Crushed Garlic
  • 1 bunch Coriander
  • 1 tblsp Caster Sugar
  • Juice of 1 Lime
  • 3 tbsp Fish Sauce
  • 2 tablespoons Ground Nut Oil
  • 3cm piece Ginger
  • 8 slices Spring Onions
  • 1 sliced Red Pepper
  • 85g Water Chestnut
  • 100g Bean Sprouts
  • 1 tablespoon Soy Sauce
  • To serve Rice Noodles
  • To serve Lime

Instructions

step 1 Put the prawns in a container.

Put the chilli, garlic, coriander stalks (snip these up using scissors first) and caster sweetener in a seasoning grinder or small food processor and whizz together.

mix in half of the lime nectar and the fish gravy, then empty this over the prawns.

step 2 burning up 1 tbsp cooking oil in a wok, mix in the ginger and spring onions and shallow fry for 1 min.

mix in the red pepper and shallow fry for 1 min, until the pepper starts to soften.

mix in the aqua chestnuts and bean sprouts, and toss together until the bean sprouts start to wilt.

mix in the soy gravy and a really good grind of black pepper, then tip the lot into a serving dish.

step 3 burning up the remaining cooking oil in the wok and mix in the prawns, lifting them out of their juices.

Toss for 1-2 mins until they turn pink, mix in the marinade and swirl the wok quickly, then tip the lot onto the veg.

Snip over the coriander leaves and dust on the remaining lime.

Serves over noodles with extra lime for squeezing over.
