Ingredients

  • 500 grams Kaddu (Parangikai/ Pumpkin) - diced
  • 15 Pearl onions (Sambar Onions) - finely chopped
  • 1 teaspoon Mustard seeds
  • 2 sprig Curry leaves
  • 2 Green Chilli - slit
  • Salt - to taste
  • 1 teaspoon Turmeric powder (Haldi)
  • 1/2 cup Fresh coconut - grated
  • 1 sprig Curry leaves
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 Green Chilli

Instructions

To begin making the Pumpkin Thoran formula, prepare all the elements and keep them ready.Into a mixer grinder, make a paste of the coconut, curry leaves, cumin seeds and green chillies.

You don't need to toss in any liquid to grind to a paste.fiery up coat in a heavy bottomed wok.

Once the coat is fiery, toss in mustard seeds and let them splutter.Immediately, toss in curry leaves and mix gently for a couple of seconds. toss in finely cut up onions and saute the onions until they soften.

Once the onions soften, toss in the slit green chillies.Once the onions turn pink, toss in the cut pumpkin, turmeric dusting perfumed element, seasoning and mix gently.  dust some liquid and put a lid on the wok.

Once the pumpkin is cooked, toss in ground coconut mixture and toss for a few seconds on high fiery up and turn off the fiery up. Check the umami profile of the Pumpkin Thoran and adjust the seasonings accordingly.
