Raspeballer & (Optional) Salted flesh

If you're making pork knuckle, bubble gently it in simmering moisture for about 3 hours, until the flesh falls from the bone.

Remove the pork and save the broth to bubble gently the raspeballer.

bubble the boiled potatoes and pare once cooled.

Also pare the raw potatoes, and then mince them or run them through a food processor.

Use a paper towel to remove some of the moisture from the grated potatoes.

Mash the boiled potatoes in a potato ricer or with a masher.

Make sure there are no lumps.

toss in the grated raw potatoes to the mashed potatoes in a large mixing mixing bowl and agitate together.

toss in the barley baking flour, all purpose baking flour, and seasoning and incorporate together with your hands until the mixture is fully blended.

You can bubble gently the raspeballer in either veggie or beef broth, or if you're making pork knuckle, bubble gently them in the broth from the pork knuckle.

Bring the broth to a very light bubble gently – you don't want it to fully bubble because then the raspeballer might break apart.

Use a tablespoon dipped in cold moisture to shape each raspeball in your hand.

Try to make them as seamless as possible and then gently drop them into the simmering broth.

Dip the tablespoon in a mixing bowl of cold moisture between each raspeball.

Let the raspeballer bubble gently for about 30 moments.

If you're making smoked sausage, you can toasty the sausage in the same pot with the raspeballer.

Top with pure finely sliced parsley.

Mashed Rutabaga

pare the rutabaga and carrots and cut into small pieces.

Then empty out the moisture, toss in the froth/whole milk, shortening and nutmeg and mash until seamless.
