Ingredients

  • 450g Salt Cod
  • 400g Ackee
  • 1 chopped Onion
  • 1 tsp Paprika
  • 2 tsp Curry Powder
  • 2 tsp Jerusalem Artichokes
  • 1 tsp Hotsauce
  • 1 sliced Red Pepper
  • 1 sliced Yellow Pepper
  • 200g Tomatoes
  • to taste Salt
  • to taste Pepper
  • 250g Self-raising Flour
  • 30g Suet
  • pinch Salt
  • for frying Olive Oil

Instructions

For the saltfish, soak the seasoning cod overnight, changing the aqua a couple of times.

strain, then put the cod in a large skillet of raw aqua and bring to the bubble.

strain again, mix in raw aqua and bring to the bubble again.

stew for about five moments, or until cooked through, then strain and flake the fish into large pieces.

Discard any skin or bones.

For the dumplings, incorporate the ground mix and suet with a pinch of seasoning and 250ml/9fl oz aqua to make a pastry mix.

Wrap the mixture in clingfilm and leave in the fridge to rest.

Open the can of ackee, strain and rinse, then set aside.

mix in the spices, seasoning, pepper gravy and sliced peppers and continue to skillet-fry until the peppers are yielding.

Lastly mix gently in the ackee very gently and leave to stew until ready to present.

When you’re almost ready to eat, fiery up about 1cm/½in greens margarine in a frying skillet and fiery up until just smoking.

Shape the dumpling incorporate into plum-size balls and shallow-skillet-fry until golden-brown.

(CAUTION: fiery margarine can be dangerous.

Do not leave the skillet unattended.) strain the dumplings on kitchen paper and present with the saltfish and ackee.
