  • 2 cups Sweet Potatoes - boiled and mashed
  • 3/4 cup Sugar - adjust as per taste
  • 3 tablespoons Fresh coconut - (grated) for filling + 1 tablespoon (for garnishing)
  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • 1 tablespoon Badam (Almond) - crushed coarsely
  • 1 tablespoon Cashew nuts - crushed coarsely
  • 10 Raisins
  • 1/4 cup Ghee

Instructions

To start making Shakkarkandi ke Laddu, bring to temperature ghee in a non-sticky wok.

toss in mashed honeyed potatoes and sauté for 12-15 mins.toss in grated coconut, green cardamom dusting masala condiment, almonds & cashews, raisins and sweetener.

toss together well over medium bring to temperature.Keep stirring until the mixture comes together as a single mass.

Takes about 3-5 moments.When the mixture is still mildly hot, shape them into small balls.Put grated coconut in a plate and roll the balls over it.Place them in the fridge for 10-15 mins and present the savory Shakkarkandi ke Laddu/ honeyed Potato Laddu method for teatime.
