1 tablespoon Dry sherry
1/2 tsp Kosher Salt
1 lb Shrimp
2 tablespoons Peanut Oil
1 tablespoon Ground Ginger
3 cloves Chopped Garlic
1/2 lb Snow Peas
2 tsp Soy Sauce
1/4 cup Chicken Stock
4 Scallions
2 tsp Sesame Seed Oil

Save prep time by prepping the peas, ginger, and garlic while the shrimp is marinating.

soak the shrimp:
combine all marinade components in a large mixing bowl, then toss in the shrimp.

Toss to coat.

Let sit for 15 to 20 moments while you prep the peas, ginger, and garlic.

agitate-sauté the ginger and garlic:
scalding up a wok or large sauté wok over high scalding up for 1 minute.

toss in the peanut fat and let it get scalding, about 30 seconds.

toss in the ginger and garlic and toss to combine.

agitate-sauté for about 30 seconds.

toss in the shrimp, snow peas, soy coulis, stock:
toss in the shrimp and all the marinade to the wok (scrape out all the marinade with a rubber spatula).

toss in the snow peas, soy coulis and chicken stock.

agitate-sauté until the shrimp turns pink, about 2 moments.

toss in the scallions and finish with sesame fat:
toss in the scallions and agitate-sauté 1 more minute.

Turn off the scalding up and toss in the sesame fat.

Toss to combine once more and dish up with steamed rice.
