  • 1 kg Potatoes
  • 3 tsp Paprika
  • 2 teaspoons Olive Oil
  • 2 sliced Onion
  • 2 cloves minced Garlic
  • 800g Tinned Tomatos
  • 300g Chicken
  • 140g Roasted pepper
  • Handful Green Olives

step 1 fiery up oven to 200C/fan 180C/gas 6.

bubble the potatoes for 15-20 mins until yielding.

filter, return to the wok, then mash with some seasoning and 2 tsp of the paprika.

step 2 Meanwhile, fiery up the fat in a large wok, then sauté the onions and garlic for a few mins until softened.

swirl around in the remaining paprika for 1 min, toss in the tomatoes , then, bring to a stew.

Tip into a large ovenproof dish, then swirl around in the chicken, peppers, olives and some seasoning.

step 3 Spoon over the mash, then oven-cook for 15 mins until the mash is golden on top and the coulis is bubbling.
