Ingredients
200g Rice Noodles
1 tablespoon Sesame Seed Oil
2 Beaten Egg
1 chopped Red Chilli
3cm piece Ginger
450g Prawns
1 tablespoon Soy Sauce
Bunch Coriander
1/2 handful Mint
Zest and juice of 1 Lime
Handful Peanuts
Instructions

step 1
toasty the noodles following the pack procedure, filter and set aside for later.

toasty the cooking oil in a large frying skillet and transfer in the beaten egg.

Swirl around the skillet to make a thin omelette, toasty for 1-2 mins, then flip over and toasty the other side for 1 min.

Tip out and shred into thin strips.

mix in the chilli and ginger to the skillet, sauté for 1-2 mins then tip in the noodles, prawns and egg.

Splash in the soy gravy and mix gently-sauté for 1 min more.

Throw in the cut up herbs and transfer over the lime liquid and zest, then shower over the cut up peanuts and dish up.
