Ingredients

  • 200g Rice Noodles
  • 1 tablespoon Sesame Seed Oil
  • 2 Beaten Egg
  • 1 chopped Red Chilli
  • 3cm piece Ginger
  • 450g Prawns
  • 1 tablespoon Soy Sauce
  • Bunch Coriander
  • 1/2 handful Mint
  • Zest and juice of 1 Lime
  • Handful Peanuts

Instructions

step 1 make the noodles following the pack directions, strain and set aside for later.

bring to temperature the cooking oil in a large frying wok and stream in in the beaten egg.

Swirl around the wok to make a thin omelette, make for 1-2 mins, then flip over and make the other side for 1 min.

Tip out and shred into thin strips.

step 2 stream in in the chilli and ginger to the wok, wok-fry for 1-2 mins then tip in the noodles, prawns and egg.

Splash in the soy coulis and swirl around-wok-fry for 1 min more.

Throw in the finely sliced herbs and stream in over the lime nectar and zest, then dust over the finely sliced peanuts and dish up.
