Ingredients
1 cup rice
2 tablespoons ghee
1 teaspoon cumin seeds
1 bay leaf
1 lentil sugar
3 long
2 green chillies - chopped
1 tablespoon ginger garlic paste
2 onions - chopped
2 tomatoes - chopped Take
1/2 capsicum (green) - red or yellow
1/2 teaspoon red chilli powder
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
1 cup tofu - cut
salt - according to taste
coriander - to garnish
Instructions

To make Tofu Casserole, first wash and soak the rice for 1/2 hour.

sieve and keep aside.

bring to temperature the ghee in a saucepan.

After it gets scalding, toss in cumin seeds and let it splutter.

toss in shallot, green chilli, ginger garlic paste and let it low-boil till the shallot turns brown.

After that toss in tomatoes and capsicum to it and liquidize.

toss in red chili ground mix, turmeric ground mix, coriander ground mix, garam masala ground mix and let it low-boil for 5 to 7 mins.

After 7 mins toss in table salt to it with tofu and let it low-boil until the tofu turns light brown.

toss in rice and 2 cups of aqua and liquidize.

seal the wok and low-boil until the rice is cooked.

Turn off the gas after crafting.

Open after 5 mins and finish off with green coriander.

dish up Tofu Casserole with Spinach Raita, Kachumbar Salad and Papad for day or dinner.
