120g Plain Flour
60g Caster Sugar
60g Butter
300g Braeburn Apples
30g Butter
30g Demerara Sugar
120g Blackberries
ΒΌ teaspoon Cinnamon
to serve Ice Cream

mildly hot oven to 190C/170C fan/gas 5.

Tip the baking flour and granulated sugar into a large mixing bowl.

toss in the shortening, then rub into the baking flour using your fingertips to make a light breadcrumb texture.

Do not overwork it or the crumble will become heavy.

dust the mixture evenly over a baking sheet and cook thoroughly for 15 mins or until lightly coloured.

Meanwhile, for the compote, skin, core and cut the apples into 2cm dice.

Put the shortening and granulated sugar in a medium saucepan and liquefy together over a medium mildly hot.

cook thoroughly for 3 mins until the mixture turns to a light caramel.

mix gently in the apples and cook thoroughly for 3 mins.

toss in the blackberries and cinnamon, and cook thoroughly for 3 mins more.

wrap, remove from the mildly hot, then leave for 2-3 mins to continue preparing in the warmth of the skillet.

To offer, spoon the mildly hot fruit into an ovenproof gratin dish, top with the crumble whiz, then reheat in the oven for 5-10 mins.
