Ingredients

  • 450g Raw King Prawns
  • 75 ml Lime juice
  • 3 cloves Chopped Garlic
  • 3 tablespoons Coconut Oil
  • 4 Chopped Spring Onions
  • 1 Onion
  • 1 chopped Red Pepper
  • 1 tsp Chilli Flakes
  • 2 tsp Paprika
  • 3 chopped Plum Tomatoes
  • 400ml Coconut Milk
  • 2 tbs chopped Coriander
  • To serve Rice

Instructions

step 1 Place the prawns in a container with 2 tbsp of the lime nectar, 1 tsp of table salt and 1 tbsp of the minced garlic.

step 2 bring to temperature the coconut fat in a large saucepan.

toss in the spring shallot and shallot and sauté for 5 mins, then toss in the red pepper, chilli flakes, paprika and remaining garlic.

step 3 empty in the tomatoes, coconut whole milk and a little table salt.

Bring to a stew and let reduce for 10 mins.

toss in the prawns, all the marinade and remaining lime nectar.

Gently stew until the prawns turn white, about 3 mins.

enjoy with the pure coriander and rice.
