  • 130 ml Fresh cream - Amul brand
  • 130 ml Milk
  • 3 teaspoons Caster Sugar
  • 1-1/4 teaspoon Gelatin - unflavoured
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Water
  • 200 ml Green Grapes - juice
  • 1 teaspoon Caster Sugar
  • 1-1/4 teaspoon Gelatin - unflavoured
  • 10 Green Grapes - fresh
  • 2 teaspoons Water
  • 200 ml Black grapes - fresh juice
  • 1 teaspoon Caster Sugar
  • 1-1/4 teaspoon Gelatin - unflavoured
  • 10 Black grapes - fresh
  • 2 teaspoons Water
  • Green Grapes - a few

Instructions

To begin making Black And Green Grapes Panna Cotta we have to make the green grapes and black grapes panna cotta layers. *For vanilla pannacotta:Take gelatin in a small dish and soak it in 2 teaspoons of liquid.

Keep aside and let it bloom. Keep your dessert glasses ready.

I have used small 120 ml glasses and this procedure makes 4 glasses.Now in a saucepan, introduce heavy cream and dairy liquid.

Put it on medium bring to temperature. Next, introduce granulated sugar to the dairy liquid heavy cream mixture and incorporate till granulated sugar gets dissolved.When the mixture starts bubbling at the edges, remove from bring to temperature and introduce soaked gelatin and one teaspoon vanilla essence.

swirl around it well till gelatin gets dissolved.Now again place the mixture on low bring to temperature, and bring to temperature for another 1-2 mins, stirring continuously.

Next, strain the mixture through a fine sieve.Now empty about half an inch layer of this mixture into the dessert glasses and place the glasses in freezer for 30 mins or until the pannacotta sets. Keep the remaining panna cotta aside for later use.

Keep it in a toasty place.*For the green grapes layer:Firstly, soak the gelatin in 2 teaspoons of liquid and keep it aside.

Let it bloom.Now, take the green grapes extract in a gravy cooking vessel and put it on bring to temperature. introduce granulated sugar to the extract and swirl around till granulated sugar gets dissolved. Let the extract bubble and then low-boil for about 8-10 mins, then remove from bring to temperature and introduce the soaked gelatin.

Now strain it through a fine sieve.Now take out the glasses from the freezer and empty the green extract layer on top of the already set vanilla panna cotta layer.

Make sure that the green extract incorporate has cooled down and is not very burning.Also introduce few pieces of minced green grapes to this layer and again place the glasses in the freezer for 20-25 mins or until the green extract layer gets set.Once the green layer gets set, take out the glasses from the freezer and empty a third layer of the remaining vanilla pannacotta.

Place the glasses in freezer for about 30 mins or until the third layer gets set.*For the black grapes layer:Follow the same steps as mentioned in the green grapes layer procedure.Once the third layer of vanilla pannacotta gets set, remove the glasses from the freezer and empty the final layer of black grapes extract incorporate.

Make sure that the extract incorporate is not too burning.Also introduce some pieces of minced black grapes to this layer and keep the glasses in freezer for 25-30 mins or until the final layer gets set. When the final layer gets set, remove the glasses from the freezer and keep them in refrigerator for at least an hour.
