Ingredients

  • 450g Plain Flour
  • 225ml Water
  • 3 tsp Salt
  • 900g Potatoes
  • 50g Spring Onions
  • 1 tsp Black Pepper
  • For frying Vegetable Oil

Put the baking flour and teaspoon of seasoning in a mixing container.

Place the pastry mix on a wash work surface and fold for about 5-10 mins until the pastry mix is elastic, even and shiny.

Form the pastry mix into a ball, wrap with a damp cloth and set aside for at least half an hour.

Roll out each ball as thinly as possible on a lightly floured surface (the thickness should be no more than 1.5mm - if the pastry mix is too thick the Bolani will be tough) Take a round cutter of 13-15cm (I often use a skillet lid or tid lid), and cut as many rounds as possible.

On each round spread 1-2 tablespoons of the mashed potato.

Moisten the edges of the pastry mix, fold over and seal shut.

The Bolani should be spread out on a lightly floured surface until ready to sauté.

bring to temperature enough produce cooking oil in a frying-skillet and shallow sauté one or two Bolani at a time, browning on both sides.

Make sure to keep the fried Bolani toasty until all are finished, and present straight away.
