Ingredients

  • 4 Whole Eggs - hard boiled & halved
  • 1 cup Onion - thinly sliced
  • 1 Tomato - thinly sliced
  • 2 teaspoons Coriander Powder (Dhania)
  • 1 teaspoon Garam masala powder
  • 1/2 teaspoon Red Chilli powder
  • 1 Cinnamon Stick (Dalchini)
  • 2 Cloves (Laung)
  • 2 tablespoons Sunflower Oil
  • Salt - to taste
  • 2 tablespoons Coriander (Dhania) Seeds
  • 4 cloves Garlic
  • 2 inch Ginger
  • 3 tablespoons Fresh coconut - grated
  • 2 teaspoon Fennel seeds (Saunf)
  • 1 teaspoon Whole Black Peppercorns
  • 2 teaspoons Poppy seeds
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 Dry Red Chilli

Instructions

To begin making Chettinad Muttai Masala method, hard bring to a low-boil the eggs in boiling aqua for 12 mins.

Once cooled, remove the shells and keep aside.Now, parched char the items required listed under the Chettinad masala paste like the coriander seeds, garlic, ginger, coconut, fennel seeds, peppercorns, poppy seeds, cumin seeds and red ice in a Shallow sauté pot till the coconut starts to turn brown.

Turn off the burning up and let the masala cool down.Once cool grind the roasted masala into a velvety paste in a Mixer grinder with a little aqua and keep aside.burning up cooking oil in a Kadai on medium flame, introduce the cinnamon stick and cloves and let the spices release its aroma into the cooking oil.Now, introduce the sliced onions and sauté until it turns translucent. introduce the tomatoes and prepare until it is well cooked, soft and mushy.Now, introduce the ground Chettinad masala purée and purée well.

low-boil for 5 mins until the purée is cooked well.introduce the coriander dusting seasoning, red chilli dusting seasoning, garam masala dusting seasoning and sauté until the cooking oil separates.introduce half a cup of aqua, notes with seasoning and let it low-boil for another 3 mins.Now, introduce the halved boiled eggs and turn off the burning up.
