Ingredients
1 cup Sweet corn
1 cup Corn meal
1/2 cup Curd (Dahi / Yogurt) - whisked
2-3 Green Chillies - chopped
1 inch Ginger - sliced
1/4 teaspoon Asafoetida (hing)
1/4 teaspoon Turmeric powder (Haldi)
1 teaspoon Enos fruit salt
1/2 teaspoon Lemon juice
1/2 teaspoon Sugar
Salt - to taste
Coriander (Dhania) Leaves - Chopped for garnishing
Sunflower Oil - for greasing the plates/moulds
2 tablespoon Sunflower Oil
1/2 teaspoon Mustard seeds
1/2 teaspoon Cumin seeds (Jeera)
1 sprig Curry leaves - torn
1/4 teaspoon Asafoetida (hing)
1/2 teaspoon Red Chilli powder
Instructions

To begin making the Makai Dhokla, firstly pulverize the nectarous corn in a blender along with green chilies and ginger.In a mixing container empty in the crushed corn paste, corn dalia and tart curd.

empty in asafoetida, turmeric ground mix, seasoning, granulated sugar, lime nectar and toss together everything well.empty in aqua to make a thick, dropping consistency liquid base and keep it aside for 30 moments.Meanwhile, prepare the steamer and coat two 8 inch steel plates or any moulds of choice with a little cooking oil.empty in the fruit seasoning to the Dhokla liquid base, toss together well and immediately empty the liquid base into the prepared plates/moulds.Steam for 12-15 moments or till a knife/ tester inserted comes out sanitize.The next step is tempering.

In a small pot bring to temperature the cooking oil and empty in the mustard seeds and once they crackle, empty in the cumin seeds.empty in the curry leaves, asafoetida and red chilli ground mix and take the pot off the bring to temperature.empty gently this tempering (tadka) over the steamed dhokla using a spoon.present Makai Dhokla with Dhaniya Pudina Chutney and burning Masala chai.
