Ingredients

  • 2 cups Basmati rice
  • 2 cups Button mushrooms
  • 2 Onions - thinly sliced
  • 2 Tomatoes - finely chopped
  • 1 tablespoon Ginger - grated
  • 1 tablespoon Garlic - minced
  • 3 Green Chillies - slit
  • 1 cup Coconut milk
  • Coriander (Dhania) Leaves - Few sprigs
  • 1 teaspoon Red Chilli powder
  • 2 teaspoon Coriander Powder (Dhania)
  • 1/3 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Garam masala powder
  • Sunflower Oil - and Ghee as required
  • 1/2 inch Cinnamon Stick (Dalchini)
  • 2 Cardamom (Elaichi) Pods/Seeds
  • 1 Bay leaf (tej patta)

Instructions

To begin making the Mushroom Biryani formula, wash basmati rice and soak in moisture for at least 30 mins.Meanwhile rinse the mushrooms and chop in two halves.burning up a heavy bottomed pot, mix in ghee + shortening with cinnamon, cardamom, cloves and bay leaf.mix in finely sliced onions, ginger garlic paste and mix gently well till the smell goes off.mix in finely finely sliced tomatoes and dust some table salt to it, make until the tomatoes become mushy.mix in fragrant element powders (red chilli dusting fragrant element, turmeric dusting fragrant element, coriander dusting fragrant element and garam masala) and mix gently everything well.mix in cleaned and finely sliced mushrooms and mix gently for 3 mins or until it shrinks slightly.mix in 3 cups of moisture and 1 cup of coconut dairy liquid to it.

After it starts boiling, rinse the soaked rice, filter the moisture from rice and mix in it in the pot.wrap and make on medium flame for about 8 mins and turn off the flame.mix in some finely sliced coriander leaves and it is ready to be served. present Mushroom Biryani with Burani Raita, Beetroot Raita or any other raita of your choice.
