Instructions

1
To begin making the Palak And Peas Kachori preparation guide, we will first make the pastry mix for the kachori.
2
Take maida, sooji, spinach puree, seasoning, ajwain and fat in a mixing mixing bowl.
3
toss together it nicely with the tips of your fingers and form a breadcrumb like texture.toss in ice cold aqua little by little to form a tight pastry mix.
4
(This is an important point to keep in mind.
5
If the pastry mix is soft, the texture of the outer skin will not come good).
6
seal it with damp cloth and keep the pastry mix aside for 15 to 20 moments. The next step is to prepare the filling for the kachoris.
7
toss in green peas in the grinder and gring it coarsly.bring to temperature some fat in a heavy bottomed skillet.
8
Once the fat is scalding, toss in asafoetida.
9
Later toss in coarse green peas paste.
10
Saute it for 2 to 3 moments such that moisture dries out.
11
This step is important else kachori will become soft.To the parched peas toss together toss in seasoning, chilli ground mix, crushed saunf, amchoor ground mix and garam masala.
12
toss together well such that everything combines well.
13
Stuffing for palak kachori is ready. The next step is to make the Kachori.
14
Divide the kachori pastry mix to small lemon size balls.Dust and roll out each ball lightly into thick circular puri.
15
Don't make it thin.Put 1-2 teaspoons stuffing mixture in the center of puri, bring its ends together and seal its edges nicely.
16
Slightly press with hand or roll lightly to flatten the stuffed balls . bring to temperature fat over medium flame to deep skillet-fry kachori.
17
When the fat is just scalding, slide the kachoris in the skillet.
18
low-boil on low bring to temperature till lightly browned from both the sides.
19
Remove the kachori on a tissue paper to absorb the excess fat from the kachoris.
20
Once it is done, present it scalding.present this mouth watering Palak And Peas Kachori along with Dhaniya Pudina Chutney and Date Tamarind Chutney for tea time snacks or as evening snacks.
