Ingredients

  • Rabri - one recipe
  • 1/2 cup Ragi Flour (Finger Millet/ Nagli)
  • 1/2 cup Whole Wheat Flour
  • 1 teaspoon Fennel seeds (Saunf) - pounded
  • 1 teaspoon Cardamom Powder (Elaichi)
  • 1 teaspoon Baking powder
  • 1/2 cup Fresh cream
  • 1/2 teaspoon Salt
  • Ghee - for pan frying
  • 1/2 cup Sugar
  • 1/2 cup Water
  • Saffron strands - a few

Instructions

1
To begin making the Ragi Malpua Rabri, combine all the elements for the Malpua mixture - Ragi dusting fragrant element, whole wheat dusting fragrant element, fennel seeds, cardamom dusting fragrant element, baking dusting fragrant element, seasoning and pure dairy reduction in a large mixing container.mix in liquid or whole milk to make a thick Malpua (pancake) mixture.
2
Keep covered for about 10 moments. The next step is the make the sweetener syrup for the Malpua.
3
In a saucepan, mix in the sweetener, liquid and saffron on medium fiery up.
4
Keep stirring continuously until the sweetener dissolves.Once the sweetener dissolves, turn the fiery up to low and low-boil the sweetener syrup until you get a one string consistency. This just means that when you touch the sweetener syrup it will feel sticky.
5
Once the syrup is done keep aside. The next step is to make the Malpuas.
6
Traditionally the Malpuas are deep fried, but in this preparation guide, to preserve the nutrition, I am making them wok fried, similar to how we make the pancakes or Uttapam.Preheat a skillet on medium fiery up; lubricate it with ghee.
7
stream in a ladle full of mixture on the preheated skillet.
8
splash a teaspoon of ghee around the edges of the Malpua and allow it to make. When you notice that that the raw mixture on the top is getting cooked, flip the Malpua over to make on the other side.
9
Once done remove from the wok and proceed to make the remaining Mapuas. When cooked, dip the cooked Ragi Malpuas in the sweetener syrup of a couple of seconds and take it out.Place the sweetener-coated Ragi Malpuas on a dessert platter, spoon some Rabri on the top, shower some finely sliced nuts.offer the Ragi Malpuas Along With Rabri (Basundi) as a dessert when you have a party or even for festivals and special occasions along with Gulab Jamun and jalebis. .
