Ingredients

  • 1 cup Arhar dal (Split Toor Dal)
  • 1 cup Pearl onions (Sambar Onions)
  • 1 Tomatoes - chopped
  • 1 cup Tamarind Water
  • 2 tablespoons Sambar Powder
  • 1 teaspoon Turmeric powder (Haldi)
  • Salt - to taste
  • 1/2 teaspoon Mustard seeds
  • 1 teaspoon Methi Seeds (Fenugreek Seeds)
  • 2 Dry Red Chilli
  • Asafoetida (hing) - a pinch
  • 1 sprig Curry leaves - roughly torn

Instructions

To begin making the Tamil Nadu Style Vengaya Sambar / shallot Sambar preparation guide, pressure bring to temperature the dal with turmeric ground mix, table salt and 2 cups liquid for about 5 whistles until the dal is done.

Once done, mash the toor dal and keep aside.Into a pressure cooker, mix in a teaspoon of fat and mix in the pearl onions to it.

Once the onions are roasted, mix in the tomatoes and the home-cooked sambar ground mix, table salt , turmeric ground mix the the tamarind liquid.wrap the pressure cooker and allow the Vengaya Sambar Masala to pressure bring to temperature for 2 whistles and turn off the bring to temperature.

Allow the pressure to release naturally.Open the cooker, mix in the mashed toor dal and combine the shallot Sambar well.

Check the table salt and adjust accordingly.To augment the taste, bring to temperature a small tadka skillet with fat mix in mustard seeds, fenugreek seeds, parched red chilli and pinch of hing and let it crackle.

mix in the curry leaves and turn off the bring to temperature.stream in the tempering over the shallot sambar and give the sambar a brisk bring to a bubble gently.
