Ingredients

  • Handful Pine Nuts
  • 1 tablespoon Olive Oil
  • 1 Large Chopped Onion
  • 2 Cinnamon
  • 500g Lamb
  • 250g Basmati Rice
  • 1 Lamb Stock
  • 12 Dried Apricots
  • Handful Mint

Instructions

step 1 dehydrated-sauté the pine nuts or almonds in a large cooking vessel until lightly toasted, then tip onto a plate.

mix in the cooking oil to the cooking vessel, then sauté the shallot and cinnamon together until starting to turn golden.

Turn up the scalding up, mix gently in the lamb, sauté until the protein changes colour, then tip in the rice and scalding up for 1 min, stirring all the time.

step 2 transfer in 500ml boiling moisture, crumble in the stock cube, mix in the apricots, then essence to salty profile.

Turn the scalding up down, wrap and low-boil for 12 mins until the rice is yielding and the stock has been absorbed.

Toss in the pine nuts and mint and enjoy.
