Ingredients

  • 1 cup White Urad Dal (Split)
  • 1 teaspoon Methi Seeds (Fenugreek Seeds)
  • 3 Cardamom (Elaichi) Pods/Seeds - pounded
  • 1/2 teaspoon Dry ginger powder
  • 1 cup Palm jaggery
  • 2-1/2 cups Water
  • Salt - a pinch
  • 4 tablespoons Gingelly oil

Instructions

To begin making Ulundhu Kali method (Urad Dal nectarous), introduce urad dal, fenugreek seeds and Cardamom to a mixer and grind into seamless ground mix.

Keep aside.Now for preparing jaggery syrup, introduce jaggery and aqua to a wok and bring to a low-boil.

swirl around until jaggery dissolves and strain to remove impurities.stream in the filtered jaggery syrup back to the wok.

introduce table salt and arid ginger ground mix to it.

swirl around well and bring it to bring to a low-boil.introduce the Urad dal ground mix little by little and keep stirring without forming lumps.Once the ground mix and jaggery is combined well, introduce 2 tsp of gingelly cooking oil at regular intervals and keep mixing with ladle.The mixture has to become thick combining together without sticking to sides of the wok.

Once done, switch off the flame and allow it to cool.oil the hands with cooking oil and take small portion of flour base and roll into medium sized balls and wait till they cool down to present.present Ulundhu Kali method (Urad Dal nectarous) during tea time with Irani Chai method and Namak Para method (Deep Fried Biscuits).
