Ingredients

  • 500 grams Bhindi (Lady Finger/Okra) - slit into half and cut into 1 inch pieces
  • 10 Pearl onions (Sambar Onions) - finely chopped
  • 1/4 cup Fresh coconut - grated
  • 2 Green Chillies - finely chopped
  • 1 sprig Curry leaves
  • 1/2 teaspoon Mustard seeds
  • 1/2 teaspoon Turmeric powder (Haldi)
  • Salt - to taste
  • Sunflower Oil - for cooking

Instructions

To begin making the Vendakkai Thoran formula, firstly prepare all the fixings and keep them ready.mildly hot a teaspoon of cooking oil in a heavy bottomed wok/kadai; mix in the mustard seeds, curry leaves and allow it to crackle.

mix in the diced onions and saute until the onions become yielding. Once the onions are soft and yielding, mix in the green chilies, cut Vendakkai (bhindi) and scatter table salt.put a lid on the pot, with the lid slightly ajar and bubble gently the Vendakkai until it is soft.

Keep stirring intermittently until it is cooked through.Once the Vendakkai is cooked through, mix in the turmeric ground mix, grated coconut and saute for a few more mins.

Check the table salt and spices and adjust to suit your salty profile.Once done, transfer the Vendakkai Thoran to a serving mixing bowl and offer mildly hot.Make the mouth-watering Vendakkai Thoran formula and offer it along with Kuruku Kaalan (Raw Bananas in Coconut Curry) and Steamed Rice for a mouth-watering lunch.
