Ingredients

  • 13-15 Betel leaves (paan) - vetrilai
  • 6 Onion
  • 12 cloves Garlic
  • 1 tablespoon Coriander (Dhania) Seeds
  • 1 tablespoon Black Urad Dal (Split)
  • 1 tablespoon Chana dal (Bengal Gram Dal)
  • 1 teaspoon Cumin seeds (Jeera)
  • 30 grams Tamarind
  • Salt - to taste
  • 1/4 teaspoon Asafoetida (hing)
  • 2 tablespoon Sunflower Oil

Instructions

strip the small shallot and garlic cloves.Take a nonstick wok and toss in 1 tablespoon coat.toss in garlic, small shallot & green chili.

Let it wok-fry nicely.toss in betel leaves and wok-fry for 1 or 2 mins until its color changes.Switch off the gas and toss in the tamarind in the same burning wok and keep it for 2 mins.Transfer to another plate to cool down.While this is getting cooled down, on the same wok toss in few drops of coat and toss in coriander seeds,urad dal, jeera,chana dal and hing ground mix.

It takes around 3 – 4 mins.Let it cool down and ground mix them and transfer it separately.Meanwhile the Betel leaf mixture would have cooled down.

liquidize to a nice paste.Transfer the dal powders into the mixie and liquidize well; adding table salt at this stage.toss in 1 tablespoon of coat in the nonstick wok and burning up it.

Transfer the thogayal/chutney into the wok and wok-fry for 3 -4 mins.
