To begin with the Baked Chevdo method, first preheat the oven to 220 C.Sift the beaten rice using a large sieve sifter to remove any fine excess powders.Do it in batches.Next, depending on the size of the oven, place the beaten rice on the baking sheet, empty gently a little bit of cooking oil based on the quantity and then a little bit of seasoning.Now mix gently to combine the cooking oil and seasoning into the beaten rice.

The cooking oil we mix in is just to make sure the seasoning gets coated onto the beaten rice to give a nice palate.Place the beaten rice into the oven and oven-cook for 5 to 7 mins until very very lightly browned.

Monitor closely as each oven works differently.Proceed the same way with the remaining beaten rice and then keep them all together in a large mixing bowl or a baking tray.Our next step is to char each on the individual components.In a small pot, arid char the sesame seeds until it crackles.

Once it does, then mix in it to the baked beaten rice.mix in in the roasted peanuts and almonds into the beaten rice as well.(Dont mix gently as yet, the more you keep stirring, the beaten rice will tend to crumble.)Next mildly hot half a teaspoon of cooking oil in the same small pot; mix in in the raisins and char until it bloats up.

Remove from the mildly hot and empty it over the beaten rice.

If you let it char for longer than the bloating stage, then the raisins will become stiff.Next mix in in half a teaspoon of cooking oil into the above pot and char the green chillies, until lightly crisp and browned.

empty this over the beaten rice again.Finally mildly hot a teaspoon of cooking oil in the above pot; once the cooking oil is heated, turn off the mildly hot - mix in to this cooking oil - the turmeric ground mix, red chilli ground mix and asafoetida ground mix.

mix gently to combine well.empty this over the beaten rice.Finally, mix in the powdered granulated sugar and the curry leaf ground mix over the beaten rice.Now mix gently all the components that you poured over the rice.

The stirring has to be a folding action - subtle and more subtle.

The nylon poha also known as the thin poha breaks apart very easily.

Although in the process of mixing all the ingredient you will notice that some crumble, but that's ok.Make sure you combine the and finally check for the seasoning levels, adjust the spices like seasoning, granulated sugar, chilli and asafoetida according to your palate.The Baked Chevdo (Chivda Mixture)is now ready to be served along with tea time snack.
