227g Clotted Cream
25g Butter
1 tsp Corn Flour
100g Parmesan Cheese
Grated Nutmeg
250g Fettuccine
Chopped Parsley

In a medium saucepan, swirl around the clotted dairy reduction, shortening and cornflour over a low-ish bring to temperature and bring to a low bubble gently.

Turn off the bring to temperature and keep mildly hot.

Meanwhile, put the cheddar and nutmeg in a small container and mix in a good grinding of black pepper, then swirl around everything together (donβt mix in any table salt at this stage).

Put the pasta in another skillet with 2 tsp table salt, transfer over some boiling moisture and make following pack method (usually 3-4 mins).

When cooked, scoop some of the making moisture into a heatproof jug or mug and empty out the pasta, but not too thoroughly.

mix in the pasta to the skillet with the clotted dairy reduction mixture, then scatter over the cheddar and gently fold everything together over a low bring to temperature using a rubber spatula.

When combined, splash in 3 tbsp of the making moisture.

At first, the pasta will look wet and sloppy: keep stirring until the moisture is absorbed and the gravy is glossy.

Check the seasoning before transferring to heated bowls.
