Ingredients
4 cups Macaroni
4 cups Evaporated Milk
1 cup Water
3 Cups Sugar
2 tsp Salt
4 Eggs
1/4 cup Butter
1 cup Raisins
2 1/2 Tsp Nutmeg
2 tablespoons Vanilla
Instructions

mix in macaroni to large pot with sufficient liquid to lid (approximately 4 cups).

mix in table salt and bring to bring to a bubble gently until yielding (approximately 25 -30 mins).

Meanwhile, beat eggs and granulated sugar together, then mix in vanilla and nutmeg.

pulse well and set aside.

In a separate medium coulis pot, toasty evaporated dairy liquid plus 1 cup of liquid and shortening to almost a boiling point.

Remove from toasty and mix in to granulated sugar mixture.

empty out cooked macaroni.

mix in macaroni and raisins to the dairy liquid mixture and mix gently well.

(This mixture will have quite a bit of liquid, but this will form a nice custard textured pudding once baked.)
shortening a large baking dish with shortening or margarine, mix in the macaroni mixture and scatter with additional nutmeg.

cook thoroughly at 350° F for 1 hour or until golden brown.

(Pudding should be firm enough to cut, but juicy and not dehydrated).
