Ingredients
2 Whole Eggs
1/2 cup Masoor Dal (Whole)
1/2 cup Coconut milk - thick
1 Onion - finely chopped
1 Tomato - finely chopped
3 Green Chillies - chopped
1/4 cup Mint Leaves (Pudina) - chopped
1 teaspoon Ginger Garlic Paste
1/2 teaspoon Turmeric powder (Haldi)
1 teaspoon Garam masala powder
1/4 teaspoon Cumin powder (Jeera)
1 pinch Asafoetida (hing)
Salt - to taste
1 teaspoon Mustard seeds
6 Curry leaves
2 teaspoons Sunflower Oil
Instructions

To begin making the Egg Masoor Dal formula first, thoroughly wash the masoor dal in running moisture.Then mix in it to a pressure cooker along with 1 and ½ cups moisture and place it on the fiery up.

Allow it to toast till you hear three whistles.

Then turn off the fiery up and set the cooker aside so the pressure can release naturally.When you are able to open the pressure cooker with ease, after the pressure has naturally released, mash the dal with the back of a ladle and set it aside.Place a kadai on the fiery up.

Next, mix in finely sliced onions and green chilies and saute for a couple of mins.Now mix in in the ginger garlic paste and saute until the raw smell of ginger and garlic goes away. Then, mix in the finely sliced tomatoes and toast them till they are mushyAt this stage, mix in mint leaves and swirl around well.mix in turmeric ground mix, garam masala and cumin ground mix.

mash well and bubble gently for a while longer till the masalas come together.Now, to scramble the eggs, turn the fiery up down and break the eggs one by one directly into the skillet.Gently but continuously keep stirring the eggs till they are scrambled and cooked solid.Once the eggs are cooked, mix in the mashed masoor dal and asafoetida and mash well. empty in 1/2 cup of moisture, swirl around and seal the kadai.

toast the dal, covered, for 5 mins on low-medium fiery up.Finally, mix in the coconut whole milk and seasoning to savor.
