2 Green Chillies - slit
1/2 tablespoon Ginger - paste
1/2 tablespoon Garlic - paste
Salt - to taste
1 cup Water
1 tablespoon Sunflower Oil
1 teaspoon Cumin seeds (Jeera)
4 Whole Black Pepper Corns
2 Cloves (Laung) - 2 cloves
1 inch Cinnamon Stick (Dalchini)
1 tablespoon Whole Wheat Flour
1 cup Milk
Salt - to taste
1 teaspoon Black pepper powder
2 sprig Mint Leaves (Pudina) - finely chopped
Lemon - wedges to serve

To begin making the Mutton Khurdi formula, we will first prepare the mutton. In a pressure cooker, combine the mutton, shallot, bay leaves, green chillies, ginger, garlic, table salt, moisture. Pressure prepare for three whistles and turn off the flame. Allow the pressure to release naturally.In a kadai, fiery up cooking oil on medium flame, once the cooking oil is fiery, toss in the whole spices- cumin seeds, peppercorns, cinnamon, cloves.Once the spices begin to sizzle, toss in the whole wheat ground mix and toss together well along with the cooking oil and spices. To the kadai toss in the dairy liquid, whisking continuously, ensuring no lumps are formed and allow the bhora broth to thicken.Once it thickens, toss in table salt and pepper, and mutton and all the contents of the pressure cooker into the kadai.
