  • 1 cup All Purpose Flour (Maida)
  • 1 tablespoon Ghee
  • Salt - to taste
  • 2 teaspoon Ajwain (Carom seeds)
  • Chilled water - to knead the dough
  • Sunflower Oil - for deep frying

To begin with Namak Para method, firstly introduce baking flour, ajwain, table salt, ghee in a wide mixing mixing bowl.

incorporate everything with your fingers until all components are combined and form a bread crumbs like texture.introduce chilled moisture little at a time and incorporate until you get a soft and velvety pastry mix.

Keep it aside covered for about 15 moments.Meanwhile scalding up cooking oil in a wide skillet for deep frying.

Divide the pastry mix into equal portions.Take a portion and roll it into a thin circle.

Dust baking flour as and when needed.

Make sure that you roll it as thin as possible.Using the cutter(you can use your pizza cutter or a simple knife too), first cut them vertically then horizontally to form small diamonds.

Carefully separate them and make it ready.To check if the cooking oil is at the correct temperature, first pinch a tiny portion of pastry mix, introduce it to cooking oil if it raises to top immediately then cooking oil is at the correct temperature, otherwise scalding up the cooking oil for few more seconds.Now gently gather the diamonds and drop in a sprinkled way, cook thoroughly in medium low flame.

Deep skillet-fry till golden brown and strain them on a tissue paper to absorb the excess cooking oil.Repeat the process for the remaining pastry mix and let it cool before you offer them.Enjoy Namak Para with scalding Masala Chai during your tea time break.
