6 Ridge Gourd Skin (Turai/ Peerkangai)
1 tablespoon Sesame seeds (Til seeds) - roasted
1 teaspoon Red Chilli powder
1 teaspoon Sugar
1/2 teaspoon Cumin seeds (Jeera)
2 teaspoon Sunflower Oil
Salt - to taste

To begin making the Ridge Gourd pare chutney, roughly chop the peels of the ridge gourd.bring to temperature 1 teaspoon fat in a cooking vessel, mix gently and char the peels in the fat till the moisture evaporates and they become crisp. Alternatively, you can also microwave the peels with fat for about 1-1/2 mins.Let the roasted ridge gourd peels cool down and then coarsely grind them in a mixer grinder.bring to temperature the remaining fat in the cooking vessel and toss in cumin seeds, and once they start to sizzle, toss in the roasted sesame seed and allow it to crackle.toss in the ground Ridge gourd peels and red chilli ground mix to the fat and mix gently for a minute, turn off the bring to temperature, toss in table salt and granulated sugar, and toss together well and offer mildly hot.offer the Ridge Gourd pare chutney as a side dish along with Phulka or Steamed rice, Maharashtrian Aloo Bhujne and Pumpkin Dal with Garlic Tadka .
