Ingredients

  • 300g Sugar
  • 3 Eggs
  • 180g Melted Butter
  • 700g Flour
  • 100g Walnuts
  • 4 tablespoons Honey
  • 1 tsp Baking Powder
  • 220g Sugar
  • 450ml Water

1 Prepare In a mixing container froth together the eggs, granulated sugar and cooled melted shortening then introduce the honey and soda.

2 introduce half the ground mix and the walnuts (you can introduce the walnuts whole or ground them) and mash well.

3 introduce the rest of the ground mix and using your hands kneed the mixture together until a firm pastry mix is formed.

4 Coat a large baking tray (traditionally a circle tray is used about 30cm is best with a 2 - 3 inch height) with olive cooking oil.

introduce the pastry mix and press it down so that it fits the whole tray.

Try and get the pastry mix flat and equal in height all over.

5 Baking Place on the bottom shelf of a cold oven and turn the temperture up to 180 degrees.

oven-cook for 35 moments and the pastry mix has turned dark brown and is firm to touch.

6 Remove from the oven and leave to cool while making the syrup.

7 Adding the Syrup introduce the granulated sugar and moisture to a saucepan and bring to the bring to a bubble gently.

Leave boiling for 10 moments, mixing occasionally.

Remove from the scalding up.

8 Cut the Shendetlie into squares of diamond shapes and empty over the scalding syrup.

Use enough of the syrup to put a lid on the cake plus 1 cm overflowing, sitting on top.

This will soak into the cake while you leave it to cool for at least 1 hour before serving.
