1/4 cup Carrot (Gajjar) - grated
1/4 cup Green zucchini - grated
1/4 cup Cabbage (Patta Gobi/ Muttaikose) - grated
1/4 cup Bottle gourd (lauki) - grated
1/4 cup Beetroot - grated
1/4 cup Tofu - grated
1 teaspoon Ginger Garlic Paste
1 teaspoon Green Chilli Paste
2 tablespoon Multigrain flour - or besan
1/2 teaspoon Coriander Powder (Dhania)
1/2 teaspoon Cumin powder (Jeera)
2 teaspoon Rice flour
1/4 teaspoon Asafoetida (hing)
1/2 teaspoon Amchur (Dry Mango Powder) - optional
Salt - to taste
Sunflower Oil - for frying (as required)
2 Onions - roughly chopped
4 Tomatoes - blanched
8 Cashew nuts - soaked in warm water for 30 minutes
1 teaspoon Garam masala powder
1 teaspoon Red Chilli powder
1 teaspoon Cumin seeds (Jeera)
1 teaspoon Ginger Garlic Paste
1/2 teaspoon Sugar
1 tablespoon Sunflower Oil
Salt - to taste
Coriander (Dhania) Leaves - for garnish (as required)

To begin making the Vegan Kofta curry method, first toss in all the fixings under ‘For the koftas’ except shortening in a mixing container.combine and make lime sized balls of the mixture (adjust the amount of besan if required, so that the mixture is effortless to handle)toasty shortening in a wok and deep shallow fry the koftas till golden brown.Take out with a slotted spoon and strain on absorbent paper.

Alternatively, shallow shallow fry in appe patra/paniyaram pot with a trickle of shortening till it is evenly browned, flipping once in between.To make the reduction- mash the bulb veggie, tomato, cashew nuts separately in a Blender to a fine pasteHeat shortening in a Kadai.

Once they sizzle toss in the bulb veggie and ginger garlic paste.shallow fry, stirring continuously till the paste turns brown.toss in the tomato paste and toasty till the moisture evaporates and you can see the shortening oozing out.toss in garam masala, red chilli ground mix and combine.

Saute for a few seconds.toss in the cashew paste, granulated sugar and table salt.combine and toss in enough moisture to get the desired consistencyBoil the reduction for a couple of mins.To enjoy, transfer the reduction in a serving container.
