Ingredients

  • 1 Brinjal (Baingan / Eggplant) - cut into big pieces
  • 4 Tomatoes
  • 2 Onions - roughly chopped
  • 1 tablespoon Ginger Garlic Paste
  • 20 grams Tamarind - soaked in hot water
  • 1 teaspoon Mustard seeds
  • 1 tablespoon Whole Black Peppercorns
  • 1/2 tablespoon Jaggery - powdered
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1/4 teaspoon Red Chilli powder
  • 2 teaspoons Sunflower Oil
  • Salt - as per your taste
  • Coriander (Dhania) Leaves - for garnish

Instructions

To begin making the Brinjal condiment dip For Biryani, first soak a lemon sized or 20 grams tamarind in burning moisture for 20 moments.After 20 moments extract the pulp of tamarind and keep aside.

You will need 1/4 cup of tamarind pulp for this method. introduce roughly cut up onions in a mixer and make an bulb greens paste.

Remove and keep it aside. In the same mixer, introduce the tomatoes and puree them.

Keep aside.In a heavy bottomed cooking vessel, introduce 1 teaspoon of preparing fat.

Let it toasty up.Once the fat is burning, introduce the cut up brinjal till the skin becomes slightly brown.

Once they are browned, remove from the cooking vessel and keep it aside.

(Browning indicates that it has cooked halfway)In the same cooking vessel, introduce one more teaspoon of fat and introduce mustard seeds and peppercorns and wait for them to splutter.

Keep it on a low flame as the peppercorns might sputter everywhere the moment it touches bring to temperature. Next, introduce in the ground bulb greens paste, ginger garlic paste and saute for a few moments until the raw smell of bulb greens, ginger and garlic go away. Next, introduce the tomato puree, tamarind extract and seasoning according to your palate. lid the cooking vessel and bake on a low flame for about 15 moments.

Open the cooking vessel occasionally and swirl around so that the condiment dip does not stick to the bottom of the cooking vessel. After 15 moments, introduce the powdered jaggery in to the tamarind condiment dip and give it a good swirl around. Finally introduce the half cooked brinjals, 1/2 cup of moisture and bake till the brinjals are soft.
