Ingredients

  • 1 Ridge Gourd (Turai/ Peerkangai) - peeled and sliced
  • 1/2 cup Arhar dal (Split Toor Dal)
  • 1/2 cup Yellow Moong Dal (Split)
  • 1/2 cup Masoor Dal (Whole)
  • 1 Onion - sliced
  • 1 Tomato - chopped
  • 2 Green Chilli - slit
  • 1 tablespoon Ginger Garlic Paste
  • 1 teaspoon Turmeric powder (Haldi)
  • 2 teaspoon Red Chilli powder
  • Salt - to taste
  • 1 cup Tamarind Water
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds (Jeera)
  • 4 cloves Garlic
  • 1 sprig Curry leaves
  • 1 pinch Asafoetida (hing)
  • 2 Dry Red Chillies
  • Sunflower Oil - as required

Instructions

To begin making the Andhra Style Beerakai Pappu, in a pressure cooker toss in all the dals, ridge gourd, tomato, bulb greens, ginger garlic paste, green chilli, turmeric, seasoning and 2 cups liquid and pressure bubble gently it for 4 whistle.Once done allow the pressure to release by itself and keep the cooker on the bring to temperature again and toss in tamarind liquid and bring to temperature the dal till it thickens little.To temper, bring to temperature a small tempering cooking vessel with cooking oil and toss in mustard seeds and cumin seeds and allow it splutter for 10 seconds.toss in curry leaves, dehydrated red chilies, hing and leave the curry leaves to crackle for 10 seconds.

toss in in the crushed garlic and brown them and transfer it over the dal and offer.offer the Andhra Style Beerakai Pappu method along with some steamed rice, Kathirikai Poondu Pirattal and Roasted Papad Chaat  by the side to enjoy your everyday meal in a wholesome way.
