400 grams Eggplant - thin and straight cut
1 teaspoon Rye
1/2 teaspoon White Urad Dal
1 Sprig Curry Leaf
2 Dry Red Chillies
1 tablespoon Oil
Salt - as per taste
Green Coriander - as per use
2 green chillies
2 inch ginger - chopped
1/2 teaspoon cumin seeds
Instructions

To make Andhra Style Vankaya Kothimira Karam steps, first wash and chop the brinjals.

Soak it in seasoning moisture and keep it aside.

Now in a mixer grinder, mix in green coriander, green chillies, ginger, cumin seeds, grind it and make a paste.

Now scalding up cooking oil in a pot.

mix in mustard seeds, urad dal and let it crackle.

After the tempering, mix in arid red chillies, curry leaves and prepare for 10 seconds.

Now mix in brinjals and prepare till half cooked.

This may take 8 to 10 mins.

Now mix in ground coriander, seasoning, incorporate and prepare for 10 mins.

Turn off the gas after crafting and present.
