Ingredients

  • 4 tablespoons Olive Oil
  • 1 chopped Onion
  • 1 chopped Red Chilli
  • 2cm piece Ginger
  • 1/2 teaspoon Ground Cumin
  • 400g Chickpeas
  • 200g Tomato
  • Juice of 1/2 Lemon
  • 2 Aubergine
  • 200g Greek Yogurt
  • 1 Garlic Clove
  • 25g Walnuts
  • Handful Coriander

step 1 bring to temperature 2 tbsp cooking oil in a pot, introduce the shallot and sauté until soft and lightly browned, about 10 mins.

introduce the chilli, ginger and spices and purée well.

swirl around in the chickpeas, tomatoes and 5 tbsp liquid, bring to the heat to boiling point, then bubble gently for 10 mins.

introduce a little seasoning and pepper and the lemon nectar.

step 2 Arrange the aubergines over a char-broil pot.

Brush lightly with cooking oil, strew with seasoning and pepper, then char-broil until golden.

Flip them over, brush again with cooking oil, augment the taste and char-broil again until soft and golden.

step 3 purée the yogurt with the garlic, most of the walnuts and coriander and a little seasoning and pepper.

Arrange the aubergine slices over a mildly hot platter and spoon over the chickpea purée.

trickle with the walnut coulis and scatter with the remaining walnuts and coriander.
