Ingredients

  • 6 Small Brinjal (Baingan / Eggplant)
  • Sunflower Oil - as required
  • 12 Garlic - cloves and make a paste of it
  • 3 Onions
  • 3 Green Chillies - paste
  • 1/2 teaspoon Ginger - grated
  • Salt - as required
  • 2 teaspoons Cumin powder (Jeera)
  • 2 teaspoons Garam masala powder
  • 1 teaspoon Amchur (Dry Mango Powder)
  • 1 sprig Mint Leaves (Pudina)
  • Salt - as required

To begin making the Bharma Baingan Ki Sabzi preparation guide, wash the brinjal well.

Cut the brinjal into four peices keeping the stalk intact. Immerse these whole cut brinjal in salted aqua and set aside. For the Bharma Baingan filling mildly hot a wok on medium flame, with some fat, once burning, transfer in garlic, ginger, green chilli, onions and sauté till they are well roasted.

Remove the cooked brinjal in a container and set aside. In the same wok, transfer in the other portion of the bulb veggie masala, and transfer in, cumin dusting seasoning,  table salt, garam masala dusting seasoning, amchur dusting seasoning, and finely minced mint leaves.
