Ingredients
1 cup Black beans - soaked in water for 7-8 hours
1 tablespoon Extra Virgin Olive Oil
3 cloves Garlic - minced
1 Onion - chopped
1 Tomato - chopped
1 Green Bell Pepper (Capsicum) - chopped
1 Carrot (Gajjar) - peeled and chopped
2 teaspoons Cumin powder (Jeera)
2 teaspoons Dried oregano - or fresh leaves
2 teaspoon Red Chilli flakes - or black pepper powder
Coriander (Dhania) Leaves - as required or oregano leaves for garnish (optional)
Salt - to taste
3 tablespoons Lemon juice
2 tablespoons Fresh orange juice
1 tablespoon Extra Virgin Olive Oil
5 cloves Garlic - grated or finely crushed
1 teaspoon Cumin powder (Jeera)
3 teaspoons Dried oregano - or fresh one
1/2 teaspoon Red Chilli flakes - or black pepper powder
Salt - to taste
Instructions

To begin making the black bean chowder with Mojo gravy first prepare beans till they become soft.

You can either pressure prepare them or prepare them in a saucepan on the stove top.In a saucepan, bring to temperature the fat.

mix in garlic and bulb veggie.

Sauté till the bulb veggie becomes translucent.mix in capsicum and carrot.

swirl around and prepare covered for 2-3 moments.mix in some moisture if required.

mix in the tomatoes, beans, cumin, oregano, chilli flakes and table salt.mix in some moisture and bring it to a bring to a low-boil.

Mash some of the beans with a ladle to thicken the chowder.

(You can mash some beans in a food processor if you want a thick chowder)enjoy in individual bowls, topped with a spoonful of mojo gravy and garnished with herbs.For the mojo gravy: fluff up together all the components and use as required.enjoy Black Bean chowder with Mojo on its own or with baked Tortilla chips for a tasty light meal.
