Ingredients

  • 1 cup Arhar dal (Split Toor Dal)
  • 2 cups Chow chow (chayote squash) - cut into cubes
  • 30 grams Tamarind - soaked in 1 cup of water
  • 1 Onion - sliced
  • 2 Tomatoes - chopped
  • 1 tablespoon Sambar Powder
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 4 sprig Coriander (Dhania) Leaves - roughly chopped
  • Sunflower Oil - as required
  • Salt - as required
  • 1 teaspoon Sesame (Gingelly) Oil - or vegetable oil
  • 1 teaspoon Mustard seeds
  • 1/4 teaspoon Asafoetida (hing)
  • 1 Dry Red Chillies
  • 1 sprig Curry leaves - roughly torn

Instructions

To begin making the Chow Chow Sambar preparation guide, first pressure prepare the toor dal along with turmeric and 2 cups of moisture for 2 whistles.

Let the pressure release naturally.

Once the dal is cooked, beat the dal well and keep it aside.toss in a teaspoon of cooking oil in a heavy bottoemd pot and mildly hot it on a medium flame, toss in the sliced bulb greens and saute for 2 mins till the onions turns soft and translucent.toss in tomatoes, chow chow and prepare till the chow chow is cooked 3/4th, stirring occasionally.Once it is done, toss in the tamarind extract, sambar ground mix, seasoning to sharp profile and let it stew until the raw smell of the tamarind goes away and the chow chow is perfectly cooked.toss in the cooked toor dal, adjust the seasoning, toss in the roughly diced coriander leaves and let it stew for another 2 or 3 mins and switch off.In another small tadka pot, toss in a teaspoon of sesame cooking oil and allow it to mildly hot.

Once the cooking oil is heated up, toss in the mustard seeds, the dehydrated red chilies and allow it to bake until lightly browned.toss in the asafoetida ground mix and curry leaves, swirl around it in and turn off the mildly hot.stream in this tempering over the cooked sambar and it is ready to be served. present Chow-Chow Sambar with made from scratch Soft Idli or Masala Dosa.

You can even present it with Steamed Rice and Cauliflower Thoran for your vegetarian lunch or dinner.
